Matthieu Girardon is a Chef who works intuitively.
His cuisine is uncompromising, natural, precisely focussed on the product, devoid of all superfluity. He works daily with the Head Sommelier Thomas Charruau to propose the finest food and wine pairings.
The restaurant menu is evolutive, varying according to the season, the day’s fresh produce and the Chef’s inspiration. In addition to the A La Carte menu, a menu Déjeuner, (lunchtime only) a menu Découverte (discovery) and a menu Dégustation (tasting) are also available. Food and wine pairings are not established in advance but are discussed with the sommeliers at the table.
